Coffee is a very common drink, and a cup of coffee in life and work is a hobby for many people.


As we all know, the types of coffee beans are divided into bean varieties and production areas. The bean varieties are Arabica, Robusta, and Liberia. And we commonly brewed in the following three ways.


1. Boiling.


It is made by directly boiling very small grains of coffee powder, mixed with sugar and other spices, and then poured into cold water, with the temperature reaching 100 degrees Celsius during the entire extraction process.


2. Filter brewing.


Filter coffee is under atmospheric pressure or near atmospheric pressure, the coffee powder is directly immersed in water extraction, or rely on the weight of the coffee powder for filter extraction brewing method, coffee concentration is generally not high (2% or less).


Filter coffee first appeared in the early 20th century in the German region. It is said that at that time, a woman wanted to try a different brewing method when making coffee at home.


So, she used her son's blotting paper instead of the regular filter paper and continuously filled the coffee powder with water through the kettle, thus extracting a cup of coffee with a novel taste.


The filter brewing method can preserve the original taste of coffee to the maximum and has now become one of the most preferred coffee brewing methods in Asia. Many white-collar elite sought-after fine coffee is the choice of high-grade coffee beans to extract, the taste is more aromatic and smooth.


Most small coffee equipment appliances like French press pots, Aloha presses, siphon pots, hand brewing appliances, etc. can be classified as such.


The basic principle of the Moka pot uses pressurized hot water to quickly extract the coffee liquid through the coffee powder. The earliest Moka pot was made by Italian Alfonso Bialetti in 1933, and his company Bialetti has been known worldwide for producing this type of coffee pot. Moka coffee pots are more commonly used in Europe.


The Moka pot is divided into two parts, the water is placed in the lower part to boil and produce steam pressure; the boiling water rises and passes through the filter pot with coffee powder; when the coffee flows to the upper part, the fire is turned down, if the temperature is too high it will cause the coffee to have a burnt taste.


The siphon pot is one of the most popular coffee brewing methods in cafes around the world. The principle is that when the water temperature in the lower container reaches 92℃ under the burning of an alcohol lamp, the water flow is sucked into the upper container with coffee powder, and the coffee made is then returned the same way by soaking and stirring.


3、Ispresso coffee


Italian coffee belongs to the typical pressurized extraction type of coffee. It originated in Italy, the most important feature is the use of steam pressure, the original coffee is extracted instantly.


Italians are fond of coffee. In their eyes, coffee is life and is also a bond of emotion. The espresso is the essence of Italy. The various varieties of coffee you see in coffee shops today are all blended with espresso as the base.


The total amount of acidity and bitterness in coffee is determined by the raw materials, so the choice of raw materials is very important. What kind of beans are chosen for roasting, how to raise the temperature during roasting, how far to roast, how to blend, etc. These operations-basically determine the taste of the coffee.


But even if you brew coffee with the same ingredients, the flavor may not be the same every time you brew it. The taste of coffee varies depending on the brewing method. Even if you use the same ingredients and ensure the same amount of acidity and bitterness, the coffee will taste different if the extraction level is not the same.
